My name is Dustin. I'm am a recent PhD graduate of the biomedical engineering program at the University of California, Davis. My objective with making hop water is to make different pleasing varieties and document the process. I don’t care for any supposed benefits of hops other than their hydration in hop water form.

Before the pandemic, I tried hop water for the first time and I really like it. I could drink the stuff nonstop but it is expensive. I would buy a Lagunitas 4-pack and it could be gone in a day. I'm lucky enough that I can find them easily as well as a chance for other hop water, such as H2OPs.

I looked up how to make it myself. The process seemed to involve carbonation equipment and other things I did not have. I don’t have the budget or space to store this dedicated equipment. Therefore, I looked into making hop water by making a concentrated fresh hop tea and adding that to the seltzer. I was inspired by Caleb Kraft after watching his success at making hop water in this way. After some experimenting with different things using cascade hops and information online, I found something I liked. It ended up tasting similar to H2OPs. From there, I set off to explore different hops and other methods that I could do simply and cheaply.

Regardless, I will be trying different techniques used in brewing and applying them to specifically make hop water.
